lionfish

Lionfish are native to the Indo-Pacific, but they have now made their way to the Gulf of Mexico, the Caribbean, and the Atlantic Ocean. They are considered an invasive species because they harm coral reefs and native fish populations. The seafood industry is trying to eliminate lionfish from the ocean, but it is a daunting task.

In recent years, the number of lionfish has increased, especially in the Gulf of Mexico and the Caribbean. Those numbers have a direct impact on the health of the ecosystems. And commercial fishing will not be enough to offset their population size.

So, a new solution is in the works. A Florida-based company called Wild Fish Direct has teamed up with Wegmans Food Markets to introduce fresh lionfish to stores in six states. Since last week, customers can try the fish at select stores.

These fish are spear-caught by underwater divers in Florida. Once they’re harvested, the venomous spines are removed. At the store, the lionfish is packaged as spineless. The flesh is white and flaky, like snapper or grouper. It is also low in saturated fats, which means it’s healthier than most other fish.

Ryan Chadwick, a New York restaurateur and entrepreneur, saw firsthand how the invasion of lionfish was damaging the ecosystem. When he moved back to New York City, he started a restaurant. He offered lionfish tacos and ceviche.

mahimahi

The latest addition to Wegmans’ roster of seafood offerings is a fancy new sushi restaurant. As the name suggests, this eatery is a one stop shop, showcasing a plethora of Asian cuisines from sushi to dumplings to dim sum. Not only does this venue feature a sushi bar, but it also has an impressively large oyster bar. You can expect an omakase style experience in which each guest gets a full seafood course for the low, low price of $30 per person.

While you’re there, be sure to browse through the fish department. This is a good time to check out the latest additions to the lineup, including salmon, tuna, and sea bass, along with a bevy of colorful seaweeds. Also, be on the lookout for free tidbits and recipes. A map of the store will save you the trouble of scouring the aisles.

As you walk through the store, it’s probably safe to assume you’ll be in the presence of a slew of helpful staffers, some of whom are more than willing to point you in the right direction. In fact, they’re more than happy to talk seafood. If you are looking for a more hands on experience, you can head to the kitchen. There you can take your pick from a menu of dozens of fresh and cooked seafood options, or just get a gumbo or a teriyaki.

wild shrimp

Wegmans, one of America’s most trusted family-run chains, recently unveiled a policy to go green. The company has partnered with Environmental Defense to create a first-of-its-kind purchasing policy for raw farmed shrimp. This policy is set to be rolled out across all 71 of its stores.

To celebrate the launch, the company is rolling out the “Get Wild with Gulf Shrimp” banner, a balloon-filled ceiling display, and cooking demonstrations at select locations. In addition to offering customers a wider variety of shrimp, they will also be selling “Get Wild with Gulf Shrimp” hats and balloons.

Wegmans has also begun offering a selection of organic black tiger shrimp. Among its other offerings, the company offers a detailed look at the shrimp’s history and processing.

The food-focused chain recently took a trip to Vietnam, where it inspected farmed shrimp farms, saw how shrimp are bred and raised, and found out that farmers are responsible for replanting mangrove forests.

In conjunction with this, the company also introduced a new product: a frozen wild-caught seafood burger. Available in four varieties, the burgers retail for $7.99 a box of four. They are a healthy choice, as each patty has only 60 to 120 calories.

With this latest policy change, Wegmans has set a precedent for sustainable seafood. Next up, the company is planning on offering sustainable yellowfin tuna, mahimahi supplies, spiny lobster tails, and more.
